Vegan “pulled pork” sandwich ๐Ÿ˜

About 3 weeks ago I went on a vegan food haul at Organic Zone in Lakeside and I did a post on all the yummy goodies I got (if you haven’t yet checked this out then please be a doll and follow this link – Vegan Food Haul) ๐Ÿ˜

Hmm, I also recall promising you a recipe using the ingredients I got from this haul and well, here it is…ย ๐Ÿ˜†

A VEGAN “PULLED PORK” SANDWICHย ๐Ÿ˜

 

Ingredients:

  • Oyster mushrooms (I used Mothercity Mushrooms – Organic Oyster mushrooms 120g)
  • Steers Prego sauce (or your sauce of choice)
  • Seasoning – garlic, smoked paprika, pepper and salt
  • Avocado
  • Vegan margarine (optional)
  • Bread (I used Italian Pugliese Bread)
  • Sprouts (I used Cherene Organics Alfalfa Sprouts)
  • Coconut oil

Directions:

  1. ย Shred the oyster mushrooms using a fork. Hold the mushroom by its stem and drag the fork downwards to shred the “meaty” part of the mushroom (use your hand to break the pieces apart if they’re being a bit difficult)
  2. Place the shredded mushroom in a medium heated non-stick pan with a very small amount of oil
  3. Let cook until it’s become a little golden and then add salt to absorb moisture
  4. Once its a bit more brown add the other seasoning
  5. Once fully cooked add the Steers Prego sauce and let marinate while cooking for a minute or 2
  6. Remove the mushrooms and assemble your sandwichย ๐Ÿ˜

I kept this post short and sweet because it really doesn’t need to be dragged outย ๐Ÿ˜…
